October is Filipino-American History Month! To celebrate, Be Mighty's own Jet will share his recipe for weeknight pancit, an iconic Filipino dish full of flavor. Register for your FREE recipe kit & cook along at home on Thursday, October 16!


Ingredients

  • 1 tbsp canola or vegetable oil
  • 1 pound boneless, skinless chicken thighs
  • 2 cloves garlic, minced
  • 1 small onion
  • 8.8 oz bihon/vermicelli rice noodles
  • 2 cups bagged cole slaw mix
  • 2 cups green beans, cut into bite size pieces
  • salt & pepper, to taste
  • 1 bayleaf


Pancit Sauce Ingredients

  • 2.5 cups low sodium chicken stock
  • 4 tbsp soy sauce (I use low sodium)
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce (or more, to taste)
  • OPTIONAL: serve with lemon wedges

Materials

  • Cutting board
  • Kitchen knife
  • A wok, large pot (one you might use to boil pasta), or a large, deep skillet
  • Tongs are ideal - but anything that can scoop/serve noodles will work 
  • Wet & dry measuring cups
  • Measuring spoons

Directions

  1. Cook the chicken in a wok, large pot, or a large, deep skillet over medium heat. Cook until tender. Set aside when cooked through.
  2. In the same skillet/pot, add the garlic and onion and cook for 2 minutes.
  3. Return the cooked chicken to your skillet and season with salt and pepper. Stir in the veggies & cooked until soft (about 3 minutes)
  4. Add your sauce ingredients and bring to a boil.
  5. Once boiling, add the rice noodles and stir until the noodles are coated. Keep stirring and cooking until noodles are tender (4ish minutes) and there’s little sauce remaining. Add more stock if the dish is dry.
  6. Time to plate! Add more soy sauce, salt, or pepper to your liking. Enjoy with lemon, if you like.

Chef Notes

  • Try using other protein, such as shrimp, pork, or tofu.
  • Sliced hardboiled eggs make a great topping, as well as green onions.
  • Make a vegan pancit by swapping chicken broth for vegetable broth - or a vegan “chicken” bouillion! Make it gluten-free by using tamari instead of soy sauce.
  • Your grocery store may not have a precise 8.8oz pack of noodles. This recipe is very flexible - add more (or less) broth & veggies to accommodate and adjust the sauce to your liking. If the pancit is too wet, cook off the sauce.
  • Got leftovers? Store in an airtight container for up to 3 days.

About the branch

The Hillary Rodham Clinton Children’s Library & Learning Center includes a computer lab with fourteen computers, teaching kitchen, large activity area, individual and group study rooms, theater, and community room in addition to a collection of more than 21,000 books, DVDs, and CDs.

In the 165-seat theater, children can experience all aspects of theater, including designing and building sets, writing plays, acting, and costume design. The state-of-the-art sound system, lighting, and projection screens is also be used for movies, concerts, and lectures.

The Children’s Library’s grounds are integral to the entire facility’s program. A greenhouse and teaching garden helps children learn about growing healthy foods as well as provide produce that are used in the teaching kitchen programs. The grounds reflect the topography of Arkansas’s ecosystems, from the native hardwood trees in the highlands to vegetation of the wetland areas, which are both planted and original to the site. Walking paths offer families an attractive place for exercise while learning the names of the trees and plants, and an amphitheater has seating for outdoor programs or nature watching.
